When snow creeps a little lower on surrounding peaks beyond Skagway and I have more time on my hands, I like to get out the seed catalogs and dream of what next year’s garden will look like! I’ve learned a lot since coming to Skagway, about what grows best and what doesn’t do so good in this climate.
Last summer, cabbage, swiss chard, kale, spinach and carrots topped em all! I learned how to make pesto with the greens that I grew and that’s what comes out of the freezer and into the soups, noodles and dips that I make on many of the cold days we are now experiencing! In fact, tonight there’s Enchilada’s with Pesto for the first time! We’ll see how good it is! I’m looking forward to taking you to visit my garden in 2011! I wonder what will grow best next summer?
